Horizon North is seeking a skilled Red Seal Chef to oversee kitchen operations in a world-class camp facility. The work rotation is generally 14 days on and 7 days off, though it may vary by site. Camp accommodations are provided. The role requires a Red Seal Certification and at least five years of experience in the food service industry. The Red Seal Chef will oversee all kitchen operations, ensuring high-quality food preparation and compliance with safety standards.
- Prepare, present, and serve high-quality rotational menus.
- Supervise kitchen staff, ensuring compliance with health, safety, and quality policies.
- Lead training, development, and mentorship of kitchen employees.
- Ensure all food preparation follows FOODSAFE and HACCP standards.
- Optimize use of labor and chemical resources efficiently.
- Provide excellent service to clients and staff.
- Plan and prepare meals while considering dietary restrictions and allergies.
- Conduct bi-weekly inventory checks and manage food ordering.
Requirements
Applicants should have extensive culinary experience, leadership skills, and knowledge of food safety standards.
- Journeyperson or Interprovincial Red Seal Certificate.
- SafeCheck advanced food safety or HACCP certification.
- Minimum 5 years of experience in the hospitality or food service industry.
- At least 5 years as a Chef in hotels, resorts, restaurants, or remote lodges.
- Proficiency in Microsoft Excel, Word, Outlook, and GFS.
- Strong knowledge of menu costing, recipe card implementation, and wage control.
- Expertise in various kitchen operations, including hot and cold kitchens, pastry, bakery, butchery, and large-scale banquets.
- Effective leadership skills with a positive, outgoing personality.
