Chef - Remote Oilfield Camps - Accommodations - 20x10 Rotations

Horizon North is hiring a Sous Chef for its camp facility in Edmonton. This position follows a 20 days on, 10 days off rotation with 12-hour shifts. The Sous Chef is responsible for overseeing daily kitchen operations, managing food and labor resources, training staff, and ensuring compliance with food safety protocols. Additional responsibilities include menu planning, inventory management, and reporting costs. Transportation is provided from a pickup point in Edmonton. This is a safety-sensitive position requiring drug, alcohol testing, and a fitness assessment.

Responsibilities

The Sous Chef will oversee kitchen operations, ensure food quality, and maintain compliance with safety standards.

  • Manage kitchen operations when the Chef is on scheduled days off.
  • Prepare, present, design, and serve high-quality rotational menus.
  • Supervise kitchen staff to ensure productivity and compliance with company policies.
  • Ensure all food is prepared using FOODSAFE protocols and meets Horizon North safety guidelines.
  • Manage food and labor resources within budget.
  • Record and report inventory on a bi-weekly basis.
  • Track and report costs in the daily spend report.

Requirements

Applicants should have extensive culinary experience, leadership skills, and knowledge of food safety and budgeting.

  • Journeyperson or Interprovincial Red Seal Certificate.
  • SafeCheck advanced food safety or HACCP certification.
  • Minimum 5 years of experience in the hospitality or food service industry.
  • At least 2 years of experience as a Sous Chef in hotels, resorts, restaurants, or remote lodges.
  • Knowledge of Microsoft Excel, Word, GFS, and Outlook.
  • Extensive knowledge of menu costing, recipe card implementation, and wage control.
  • Strong leadership skills with a positive and outgoing personality.
  • Valid Class 5 Driver's License.
