Dexterra Group is hiring experienced Chefs for its Northwestern Ontario remote camp operations. This senior culinary leadership role oversees daily kitchen operations, menu planning, food preparation, and staff training to ensure consistent quality and safety across all meal services. The Chef will manage food ordering, inventory, and team performance while maintaining HACCP and FOODSAFE standards. This camp-based position offers a competitive daily pay rate of $335, full accommodations, meals, and paid travel from Thunder Bay or Winnipeg. Responsibilities

The Chef oversees all kitchen operations, ensuring high standards of food quality, safety, and team performance within the remote camp environment.

  • Supervise and coordinate all kitchen staff to ensure compliance with company standards and procedures.
  • Plan and execute menus aligned with nutritional, dietary, and client requirements.
  • Ensure food safety compliance using HACCP and FOODSAFE practices.
  • Monitor and control inventory, food costs, and labor efficiency.
  • Train, mentor, and evaluate culinary team members to promote growth and consistency.
  • Oversee preparation, serving, and storage of food items for all meal services.
  • Conduct bi-weekly inventory checks and maintain accurate records.
  • Ensure positive client and staff interactions through professional and personable service.

Requirements

Ideal candidates will bring advanced culinary expertise, leadership experience, and a strong background in large-scale or remote camp food operations.

  • Journeyperson or interprovincial Red Seal certification preferred.
  • Valid Food Safe certification required.
  • Minimum 10 years of experience as a Chef in hotels, resorts, restaurants, or remote lodges.
  • Proficiency in menu costing, recipe standardization, and budget management.
  • Strong leadership, communication, and organizational skills.
  • Proficiency in Microsoft Word, Excel, Outlook, and GFS software.
  • Comprehensive knowledge of hot and cold kitchens, bakery, butchery, and banquet operations.
  • Physical ability to lift up to 50 lbs and work in a demanding kitchen environment.
