Sous Chef - Remote Camp Jobs in Nunavut Mining
Dexterra Group is hiring a Sous Chef (Fly-in/Fly-out) for a Horizon North remote camp facility on Baffin Island, Nunavut, operating on a 28-day on / 14-day off rotation. This position supports the Executive Chef in all aspects of camp kitchen operations - from menu planning and staff supervision to inventory control and food quality assurance. Working in a large-scale northern camp environment, the Sous Chef ensures compliance with FOODSAFE and Horizon North standards while maintaining high culinary standards and efficient resource use. The Sous Chef supports culinary leadership, quality assurance, and kitchen efficiency in a large-scale remote camp setting.
- Provide full kitchen management coverage during the Chef's scheduled days off.
- Prepare, present, and serve diverse, high-quality meals following rotational menus.
- Supervise all kitchen staff, ensuring compliance with health, safety, and company quality policies.
- Assist in ordering ingredients, managing budgets, and maintaining food and labor cost control.
- Ensure all food preparation meets FOODSAFE and Horizon North safety standards.
- Monitor daily spend reports and maintain accurate inventory and cost tracking on a bi-weekly basis.
- Train and mentor kitchen staff to ensure consistency and adherence to company culinary procedures.
- Support menu planning, recipe costing, and continuous improvement of food service delivery.
Requirements
Candidates must bring proven culinary leadership, technical knowledge, and readiness for rotational northern work.
- Journeyperson or Interprovincial Red Seal Certification in Culinary Arts.
- SafeCheck Advanced Food Safety or HACCP Certification required.
- Minimum 5 years of experience in the hospitality or food service industry.
- At least 2 years of experience as a Sous Chef in hotels, resorts, restaurants, or remote camps.
- Comprehensive understanding of international and domestic cuisines.
- Strong proficiency with Microsoft Excel, Word, Outlook, and GFS systems.
- Experience in menu costing, recipe implementation, and wage control.
- Effective leadership with strong communication, teamwork, and problem-solving skills.
- Positive, adaptable attitude suitable for remote and demanding camp environments.
