Dexterra Group is hiring an Executive Chef for a Horizon North remote camp facility in Igloolik, Nunavut, working on a 28-day on / 14-day off rotation with flights provided from Edmonton, Alberta. This role leads all culinary operations within a large northern lodge environment, overseeing kitchen staff, menu planning, food safety, and quality control. The Executive Chef ensures that all meals meet HACCP and FoodSafe standards while maintaining excellence in presentation and efficiency in cost control. The Executive Chef oversees all culinary operations, ensuring exceptional food quality, menu design, and team leadership in a remote northern camp setting.
- Plan, design, and prepare high-quality rotational menus suitable for large-scale camp operations.
- Supervise and train kitchen staff, ensuring compliance with Horizon North's health, safety, and quality standards.
- Implement and maintain FOODSAFE and HACCP procedures in all food handling and preparation.
- Lead daily kitchen operations, monitoring productivity, food presentation, and cost efficiency.
- Ensure all meals accommodate dietary restrictions including allergies, vegan, and vegetarian needs.
- Conduct bi-weekly inventory counts, manage food ordering, and control ingredient costs.
- Effectively manage chemical and labor resources to maintain efficiency and safety.
- Serve guests and staff professionally while maintaining high service standards.
- Maintain sanitation and food quality compliance under northern camp conditions.
Requirements
Ideal candidates bring extensive culinary leadership, technical expertise, and a commitment to safety and quality within a high-volume, remote environment.
- Journeyperson or Interprovincial Red Seal Certification in Culinary Arts.
- SafeCheck Advanced Food Safety or HACCP Certification.
- Minimum 10 years of experience in the hospitality or food service industry.
- At least 10 years as a Chef in hotels, resorts, restaurants, or remote camps with diverse culinary knowledge.
- Expertise in menu costing, recipe card development, and wage control.
- Comprehensive knowledge across kitchen disciplines - hot, cold, pastry, bakery, butchery, and banquets.
- Strong computer skills (Microsoft Excel, Word, GFS, Outlook).
- Proven leadership with effective communication, mentoring, and problem-solving skills.
- Ability to maintain morale and high performance under rotational remote work conditions.
