Horizon North, a division of Dexterra Group (TSX:DXT), is hiring a Sous Chef for Kobes Creek Lodge in Peace River, British Columbia. This position operates on a 20 days on / 10 days off rotation in a world-class camp facility, with transportation provided to site. The Sous Chef oversees all aspects of kitchen operations, including menu planning, food preparation, staff supervision, and compliance with Horizon North's food safety and HACCP protocols. Responsibilities
The Sous Chef is responsible for leading kitchen operations and maintaining high culinary standards within the camp environment. Duties include:
- Prepare, present, and serve high-quality rotational menus.
- Supervise kitchen staff and ensure compliance with company health, safety, and quality standards.
- Train, develop, and mentor culinary team members.
- Plan menus and order ingredients in line with budget and client expectations.
- Ensure all food is prepared safely using FOODSAFE and HACCP standards.
- Conduct regular inventory checks and manage food and labor resources efficiently.
- Accommodate special dietary needs including allergies, vegan, and vegetarian requirements.
- Participate in all kitchen duties as needed, ensuring timely meal service and cleanliness.
- Serve clients and staff professionally while maintaining exceptional service standards.
- Perform other related duties as assigned.
Requirements
Successful candidates will demonstrate strong culinary leadership, technical expertise, and food safety knowledge. Requirements include:
- Interprovincial Red Seal Certificate required.
- SafeCheck advanced food safety or HACCP certification.
- Minimum 10 years' experience in the hospitality or food service industry.
- At least 10 years as a Chef in hotels, resorts, restaurants, or remote lodges.
- Comprehensive knowledge of international and domestic cuisines.
- Proficiency with Microsoft Excel, Word, Outlook, and GFS.
- Strong skills in menu costing, recipe implementation, and wage control.
- Extensive hands-on experience in hot and cold kitchens, pastry, bakery, butchery, and banquets.
- Effective leadership, communication, and organizational skills.
- Positive attitude and ability to work in a fast-paced camp environment.
