2nd Cook - Premier Gold Project - 28 Days In / 14 Days Out - Camp Work

Sodexo is hiring a 2nd Cook for the Ascot camp near Stewart, BC. This permanent, full-time position operates on a 28/14 rotational schedule and camp accommodations are provided. The 2nd Cook will prepare and serve a wide variety of meals, ensuring compliance with HACCP standards and supporting high-volume kitchen operations under minimal supervision.

Responsibilities

The 2nd Cook supports high-volume meal preparation and safety compliance in a remote camp kitchen. Responsibilities include:

  • Preparing hot/cold meals for all meal periods and catered events
  • Using various industrial kitchen equipment to cook and mix ingredients
  • Following HACCP procedures and corrective actions for food safety
  • Maintaining and labeling inventory using FIFO rotation practices
  • Submitting accurate ingredient label requests with allergy signage
  • Cleaning, sanitizing, mopping, and sweeping kitchen areas
  • Handling food prep including trimming meat and vegetables
  • Performing classical and modern plating and garnishing
  • Participating in safety meetings, training, and FLHA compliance
  • Supporting scheduling, supervision, and team task delegation
  • Reporting accidents and maintaining punctuality and grooming standards

Requirements

Candidates must have significant culinary experience, food safety knowledge, and supervisory capabilities. Requirements include:

  • Red Seal or equivalent international certification
  • Minimum 10 years' experience as Journeyman in high-volume camp or institutional kitchen (1,000-5,000 persons)
  • Supervisory experience and ability to train/schedule staff
  • Proficiency with Microsoft Office
  • Basic baking knowledge and kitchen management techniques
  • 3-5 years of high-volume food prep experience
  • 3 years of HACCP experience
  • Valid Food Safety Certification or provincial equivalent
  • Strong communication and interpersonal skills
  • Ability to stand for extended periods and work day/night shifts
  • Must pass Pre-Access Drug and Alcohol Test
  • Good attendance and performance record

Premier Gold Project

The Premier Gold Project (PGP), located near Stewart, British Columbia, is an underground mining operation developed by Ascot Resources. The project encompasses several deposits, including Premier, Silver Coin, and Big Missouri. In April 2023, Ascot secured a financing package to advance construction, with first gold pour anticipated in early 2024. By March 2024, ore processing had commenced, marking a significant milestone toward full production. The project is expected to produce approximately 1.1 million ounces of gold and 3 million ounces of silver over its mine life.
