Dexterra Group is hiring a First Cook for its Horizon North remote camp facility in Nunavut, working a 4-week on / 2-week off fly-in/fly-out rotation from Edmonton, Alberta. The First Cook is responsible for preparing and cooking high-quality meals in a fast-paced camp kitchen, maintaining strict food safety, cleanliness, and quality standards. This role ensures meal service meets Horizon North standards while maintaining a safe and organized workstation in Arctic conditions. Responsibilities

The First Cook plays a key role in delivering high-quality meals while maintaining a clean, safe, and organized kitchen in a remote Arctic camp.

  • Prepare and cook all main meals and menu items to Horizon North standards.
  • Maintain a clean and organized workstation throughout each shift.
  • Follow COVID-19 safety protocols, including PPE use and sanitation requirements.
  • Ensure consistency and accuracy in meal preparation and portioning.
  • Monitor food safety standards, labelling, and storage in compliance with HACCP guidelines.
  • Complete production logs, HACCP records, and required kitchen documentation.
  • Supervise and coordinate with other kitchen staff to maintain quality and efficiency.
  • Perform end-of-shift cleaning, sweeping, and mopping of all work areas.
  • Receive, inspect, and store food and supply deliveries properly.
  • Assist with weekly and monthly cleaning schedules and other assigned duties.

Requirements

Applicants must have proven culinary experience, safety certifications, and the ability to perform under remote northern work conditions.

  • Valid Food Safety Certificate required.
  • Occupational First Aid (OFA) Level 3 required.
  • HACCP certification considered an asset.
  • Minimum 3 years' experience in the hospitality or food service industry.
  • At least 1 year experience as a First or Sous Cook in hotels, camps, or restaurants.
  • Strong theoretical and practical knowledge in hot, cold, bakery, and butchery operations.
  • Competent with Microsoft Word, Excel, Outlook, and Sysco software.
  • Ability to lift up to 50 lbs and stand or move for extended periods.
  • Successful completion of WHMIS test (minimum 80% score).
  • Adaptability to extreme weather and long rotation shifts in Nunavut.
