1st Cook - Premier Gold Project - 20 Days On / 10 Days Off (10 Hour Shifts) - Camp Jobs

The 1st Cook is responsible for leading kitchen operations and preparing meals in a high-volume camp environment. Responsibilities include:

• Preparing meals for à la carte, buffet, and special dietary needs
• Operating kitchen equipment and applying advanced cooking techniques
• Collecting and analyzing HACCP data and correcting non-compliance
• Following complex recipes for soups, meats, vegetables, and more
• Supervising and training less experienced kitchen staff
• Assigning production tasks and overseeing inventory processes
• Maintaining sanitation and complying with safety standards
• Participating in safety meetings and foodborne illness training
• Entering production data using software systems
• Performing additional tasks as assigned by leadership

Applicants must have advanced culinary experience and leadership capabilities. Requirements include:

• Red Seal or equivalent international certification
• Minimum 10 years of Journeyman-level cooking in high-volume settings (1,000-5,000 persons)
• Supervisory and scheduling experience
• Proficiency in Microsoft Office
• Basic baking knowledge and kitchen management skills
• 3-5 years of experience in high-volume food preparation
• 3 years of HACCP experience
• Ability to work day or night shifts
• Must pass Pre-Access Drug and Alcohol Test
